Kale is an amazing superfood packed with tons of nutrients needed for our bodies to perform its healthy functions. The only thing is that kale is not the most savory vegetable, am I right? So we often find ourselves trying to mask the bland flavor of this super green… This recipe is quick, easy, and DELICIOUS! Yes, you read that right, it’s actually delicious. So much so, that my husband Bobby (the mastermind behind Yummee Keto), who is not much of a vegetable eater, loves it!
Let’s get cooking!
Prep time: 10 min
Cook time: 15 min
INGREDIENTS
- 1 to 2 cups of kale (depends on how much you want to eat and if you have other sides to eat it with)
- 1 tbsp butter
- 1 tsp minced garlic
- 1/3 cup chopped yellow onion
- 3 strips of bacon
- optional: 1/2 cup of chopped ham
INSTRUCTIONS
- Use a nonstick saucepan to melt the butter in medium heat. Then add the garlic and onion, and let caramelize for about 2 min.
- Cut the bacon into little square pieces, and then add bacon and ham to cook for about 5 min.
- As the bacon and ham gradually cook, add the kale.
- Stir the kale so it absorbs the bacon and ham fat, and all the other juices! Let kale cook for about 5 more minutes or until it wilts.
- Remove everything from heat and let cool for 1 minute. Serve and enjoy!
This meal is very substantial, but if you wish to have it as a side dish, it can pair well with Nasoya’s Pasta Zero Spaghetti or our keto bread.
