There is nothing more comforting than warm and crispy pancakes in the morning, so we wanted to bring you a keto option!
Wet Ingredients

3 eggs

1/4 tsp vanilla extract

2 oz cream cheese

2 tbsp butter
Dry Ingredients

1 1/2 tbsp keto sweetener (our favorite is SoNourished)

1 tbsp unflavored protein powder (Isopure)

1/2 tsp baking powder
-
1/4 tsp xanthan gum (optional if you have it)

1/2 tsp cinnamon

Optional: 1/8 pumpkin pie spice

Optional: Keto Chocolate Chips (Lily’s)
Directions

Melt butter and soften cream cheese slowly together in microwave for 2 minutes on power 3 (even better is to slowly melt these together in a double boiler).

Mix all wet ingredients in a food processor, blender or mixer until fully mixed (food processor creates the most blended ingredients and fluffiest pancakes).

Heat pan on stove top to medium heat.

Mix in dry ingredients into wet ingredients until fully mixed. It should be fluffy.

Pour small circles of batter on heated pan and cover pan (covering the pan helps the pancakes to firm up so flipping is easier).

Cook for 4-5 minutes until golden brown on the underside. Keep testing underside and try to flip as soon as possible, but not too early to where the top side will not stay together when flipping.

Cook other side for 2-3 minutes.

Add any toppings you like such as sugar free syrup, butter, whipped cream or strawberries and enjoy!
