Mix nuts in food processor on low power for 10-15 minutes, or until buttery smooth. Pause mixing in between multiple times to scrape nuts from sides for even mixing.
Add all other ingredients EXCEPT SWEETENER and mix until fully blended.
Add sweetener last and mix in on low speed.
Notes
Store in mason jars on counter or in the refrigerator…whichever you prefer.
You can try using a blender for the recipe, but in my experience, the nuts will not become smooth, but gritty. My theory is that a blender is too powerful and the nuts get chopped up too quickly, before they’ve been given a chance to heat up a bit. By using a food processor on low power, the nuts will heat up and release their oil as they are being blended. So, after some time processing, the nuts will become a smooth texture.
