Psyllium Husk on Keto | Better Bread, Better Digestion

If there is one ingredient that quietly holds the whole keto kitchen together, it's psyllium husk. It doesn't get the glory like bacon or butter, but ask anyone who has baked a loaf of keto bread that actually bends instead of crumbling — psyllium is the reason.

So what is it? Psyllium husk is the outer coating of seeds from the Plantago ovata plant. It's roughly 70% soluble fiber, and when it meets water it forms a thick, elastic gel. That one simple trick — turning water into gel — is what makes it both a digestive powerhouse and the closest thing keto baking has to gluten.

Wait… Isn't Fiber a Carb?

Yes — and that's the beauty of it. Remember the NET CARB equation: (Total Carbs) – (Fiber) – (Sugar Alts.) = NET CARBS. Fiber doesn't raise your blood sugar, so you subtract it. A tablespoon of psyllium has around 8g of total carbs, but about 7g of that IS fiber — leaving roughly 1g net carb or less. On a diet where you're counting every gram, that's about as close to a free food as it gets.

Here's the part nobody warns you about when you start keto: you just crossed out most of the fiber you used to eat. Fruit, oatmeal, whole grains, beans — gone. Add in the water loss that comes with cutting carbs, and you get the most common keto complaint of all… constipation. Some studies put it as high as half of new keto dieters.

How to Use It (The Fun Part)

Gluten is what makes regular bread stretchy, chewy, and able to hold its shape. Almond and coconut flour have none. Psyllium's gel does gluten's job: it binds the dough, traps air bubbles so your loaf actually rises, and holds in moisture so it doesn't crumble when you slice it.

The simplest way to get the digestive benefits: stir 1 teaspoon into a full 8oz glass of water and drink it right away — it starts gelling within a minute, and nobody enjoys drinking pudding. You can also blend it into smoothies or shakes for extra thickness and staying power.

Sauces, soups, gravies, salad dressings — whisk in ¼–½ teaspoon at a time, wait a couple of minutes, and repeat if needed. It's virtually tasteless, works hot or cold, and replaces the flour or cornstarch you can't use anymore. It keeps thickening as it sits, so stop a little early.

4. As an Egg Substitute

Mix 1 teaspoon of psyllium powder with 3 tablespoons of water, let it sit 10 minutes, and you've got a binder that replaces one egg in most bakes.

How Much, and How to Start

Start with 1 teaspoon a day in plenty of water, and work your way up slowly over a week or two — most people land somewhere around 1–2 tablespoons of husk (roughly 5–10g) daily. Going from zero to a huge dose overnight is the classic mistake, and it's where the gas-and-bloating horror stories come from. Remember that your baked goods count toward the total, too!

The label should say exactly ONE ingredient: psyllium husk. That's it. Skip the flavored fiber supplements — the orange stuff at the drugstore is loaded with sugar (and even the "sugar-free" versions sneak in maltodextrin, which spikes blood sugar). For drinking, whole husks work great; for baking, grab the finely ground powder (or grind whole husks yourself in a coffee grinder). If you want to go the extra mile, look for the USDA Organic seal.
